How to Edit Optional Tags?

I know this has to be simple, but I've looked and looked and must just be missing something. Where am I able to define what an optional tag is? :roll:

What do you mean with 'define'?

How do I make the tag say or mean what I want it to?

Use the 'Edit > Rename tags' menu.
