You can use tags almost everywhere actually. Tags are explained here.
I also wrote a page about tags here: How to make your email's look more personal.
It is possible you have to paste the tag from the somewhere else (or use the Edit > Insert Tag' menu) since the '[' and ']' are forbidden in some fields.
