Making HTML/Text work properly

For some reason, when I send an HTML/Text formatted message out to one of my test mail recipients using a Macintosh and Entourage, they do not see the plain text alternative. If they use their preferences to turn off "View Complex HTML", the alternative text doesn't show up -- nothing at all appears.

Any ideas?

Entourage is not the right tool to test that because of all the bugs it contains. This is one of them, not displaying alternative text. It sometimes tries to extract text from the HTML. Use Mac OS X Mail, it is not buggy and work fine for testings.
