it would be great if it was easier to change the headers (OPTs) in the recipients window.

As a first time user, I discovered the OPTs in the preferences, (BTW when I changed them there it didn't effect the recipients list until I quit and relaunced MaxBulk) but it is more natural to hold down the option or control key while clicking on the headers to reveal a pulldown menu where these OPTs can be renamed.

Also, it would be great if you could sort the order (example: name, surname, company... to company, name, surname...). Also is there a way to hide headers? For certain lists I don't need "company".

The Opt renaming in the preferences is application wide. It takes effect to the next documents you create thereafter. If you need to rename the Opt fields for the current document only use the document wide 'Edit | Rename Tags' menu.

About sorting, do you mean sorting the 3 columns at the same time?

Right now it is not possible to hide columns.
